Keto Fat BomB Eggnog Bites

Delicious Keto Eggnog Cheesecake Recipe is a genuine Fat Bomb treat just for Christmas (But you can make them anytime as a dessert or snack). They’re a very low carb Christmas dessert, sweet and creamy.

Base Ingredients:

  • ½ cup of Almond Flour
  • ¼ cup of Golden Flaxseed Meal
  • 2 tablespoons of Natvia (Stevia sweetner)
  • ¼ teaspoon of Nutmeg
  • 1 ounce of Unsalted Butter, melted
  • 1 large Egg

Filling Ingredients:

  • 12 ounces of Cream Cheese, softened
  • ⅓ cup of Natvia
  • ½ teaspoon of Vanilla Extract
  • ¼ teaspoon of Nutmeg
  • 3 teaspoons of Rum Essence
  • ½ cup Heavy Cream
  • 1 large Egg
  • Topping Ingredients:
  • ½ cup of Heavy Cream, whipped
  • 1 pinch of Nutmeg

Directions For the Base:

  • Preheat oven to 160C/320F.
  • In a mixing bowl, combine the almond flour, flax meal, Natvia and nutmeg. Mix well.
  • Add the melted butter and egg and mix well.
  • Evenly spoon the mixture between 12 holes of a regular muffin tin lined with silicone cupcake molds and press into a flat base layer.
  • Bake in the oven for 10-12 minutes until golden brown. Set aside to cool.

Directions for the Filling:

  • Place the cream cheese, Natvia, vanilla, nutmeg, and rum essence into your stand mixer, with the whisk attachment, and mix on medium speed until the cream cheese is smooth. Scrape down the sides with a silicone spatula to ensure everything is combined.
  • Add the cream and egg into your stand mixer and mix on medium speed for 3 minutes, until the mixture is smooth.
  • Evenly spoon the mixture on top of the cooled bases.
  • Bake in the oven for 15-18 minutes, until the edges are set and the center is slightly jiggly.
  • Allow cooling at room temperature for 20 minutes, before setting in the fridge for at least 2 hours.
  • Topping:
  • Add the whipped cream to a piping bag with a star nozzle and pipe a tablespoon-sized amount of cream onto each cheesecake. We recommend using disposable piping bags.
  • Sprinkle with a pinch of nutmeg and serve.

Yummy Yummy Recipe – Keto Friendly

Keto No-Noodle Chicken Soup

Ingredients
• 4 oz. ghee (or butter if preferred)
• 2tbsp dried minced onion
• 6 oz. mushrooms, sliced
• 2 garlic cloves, minced
• 8 cups of chicken bone broth
• 1 medium-sized carrot, sliced
• 2 tsp dried parsley
• 1 tsp salt
• 1/4 tsp ground black pepper
• 1 1/2 rotisserie chicken, shredded
• 5 oz. green cabbage, sliced into strips

How to make it

Step 1
Melt the butter in a large pot, over medium heat

Step 2
Add dried onion, chopped celery, sliced mushrooms, and garlic into the pot and cook for 3-4 minutes

Step 3
Add broth, sliced carrot, parsley, salt & pepper. Simmer until vegetables are tender.

Step 4

Add cooked chicken and cabbage. Simmer for an additional 8-12 minutes until the cabbage “noodles” are tender

January Exercise

Bulgarian Split Squat

Targets – Quads, Hamstrings, and Glutes

Benefits – Strengthen and shaping; Balance. This is a single leg movement which isolates the leg.

To Begin:
Using low bench (or step) place backfoot up, resting on toes.

Hop your front leg forward and plant your leg, foot straight.

Make a 90-degree angle in your front knee as you dip down making sure your knee never your toe

Return up to start position. Repeat same leg 12 -15 times.  Switch and repeat on opposite leg.

Repeat 3-4 sets.

For more of a challenge, add hand weights.  Once you add weight it’s great for your core!

Leftover Turkey (Chicken) Soup

This Leftover Turkey (or Chicken) Soup recipe offers a delicious way to use leftover turkey or chicken. It’s easy to matasty and and works for low-carb, keto, Atkins, Paleo, diabetic, gluten-free, dairy-free, and nut-free diets.

 

Prep Time 10 minutes

Cook Time 15 minutes

Total Time 25 minutes

Servings 4

Ingredients

  • 2 tablespoons butter (ghee or coconut oil may be substituted)
  • 2 ribs celery sliced
  • 2 ounces yellow onion chopped
  • 1/4 cup carrot diced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper freshly ground
  • 1 teaspoon onion powder
  • 4 cups chicken stock(32 ounces) packaged broth or stock works fine as well.
  • 1 pound cooked chicken or turkey meat(about 2 cups) cut or torn into bite-sized chunks
  • sea salt to taste
  • 1 tablespoon fresh parsley chopped

Instructions

  1. Heat a dutch oven or soup pot over medium-high heat. Add butter. When butter has melted and is no longer foaming, add the celery and onion.
  2. Stir celery, onion, and carrots until they are just beginning to soften. Add the thyme and black pepper. Continue to cook vegetables until they are crisp-tender.
  3. Stir in the onion powder. Stream in the broth, while stirring. Stir in chicken or turkey meat.
  4. Bring soup to a simmer. Simmer, stirring occasionally, until vegetables are tender.
  5. Taste and add salt if necessary. If you used regular broth, you may not need to add any. If you used stock or low-sodium broth, you may need to add 1/2-1 teaspoon, depending on your taste.
  6. Stir in parsley just before serving.

Creamy Avocado Dressing

  • 1/2 – 1 avocado
  • 1/4 cup cilantro
  • 2 tbsp olive oil
  • 2-4 tbsp water
  • lime juice to taste (about 1 lime)
  • 1 medium garlic clove
  • sea salt to taste
  • red pepper flakes to taste

How to make it

In a blender or food processor combine ingredients for the dressing until smooth. Store in fridge for 5-7 days
